This year I had the pleasure of cooking my first turkey! I was super naive, to say the least, but it turned out pretty good (the breasts were a little dry). But it was also the first Thanksgiving that just my husband, son and I got to celebrate together… alone. After almost 4 years of marriage, we have had our fair share of hard times, but God blessed us this year with a dinner, and to have it by ourselves. And it was the best!
But, this meant that we had a ton of leftovers. We were given an almost 13 lb. bird, do you know how many people a 13 lb. bird is recommended for…6-7! We did bless my mom with almost a pound of leftovers, and we munched for several days after Thanksgiving. But my husband did finally ask me to make a casserole with rice and this is what I came up with. The original recipe is a Six Sisters’ Stuff recipe, that I have adapted twice now: http://www.sixsistersstuff.com/2014/03/easy-chicken-and-noodle-casserole.html. First, I adapted it for Tuna Noodle Casserole, so not too much change. But this time, I made Turkey Rice Casserole.
Since I have no pictures… I know, I know. So here is what I did.
Preheat the oven to 350 degrees.
First I cooked a decent amount of brown rice (I pour till I feel there’s enough, I did have leftover rice. And you can totally use white rice for this, my husband prefers brown).
While the rice was cooking, I chopped one stalk of celery and 1/3 of a yellow onion, and pan fried both in some butter.
Also, I mixed up the sauce (which is where the above mentioned recipe comes into play). I took one container of Pacific Organic Cream of Chicken, 1/2 of an 8 oz container of Daisy Sour Cream, 1/4 to 1/3 cup of Pacific Organic Low Sodium Chicken Broth, some garlic powder, 1/2 cup of cheddar cheese and a pinch of S&P. Then just mix it together with a spoon.
Since the rice was still cooking, I took a small casserole dish, and covered the bottom in a decent layer of leftover turkey, then added the cooked rice and celery-onion mixture. Lastly, I poured the sauce over everything and stirred till combined.
Bake covered for 20 minutes, then uncover and bake for another 10 minutes. Then enjoy:D
